Oh, my. God. Okay, so there’s this weekly tradition my little brother and I have: on Sundays, I cook dinner, he cleans, and then we pick a movie or a TV show at the end of the night to enjoy with our yummy meal in a tidy space. My brother adores Italian food and instead of his weekly choice of pasta, he requested this classic chicken parmesan sandwich which I was more than happy to deliver. This sandwich is a “niche gatekept corner store or basement Italian restaurant” level of wow. The kind that costs $4 NO TAX. This is the kind of sandwich you think about halfway into your last class of the day and the motivation that keeps you going. This meal was the highlight of my week and it’ll be yours too. Let’s get started!


Ingredients: (4 servings)
2 chicken breasts
1 baguette
1 cup of Marinara sauce
1 tsp of heavy cream
1 cup of freshly grated parmesan
2 cups of fresh baby spinach
1 cup of Italian-style breadcrumbs
2 eggs
1½ cup flour
1 tsp of reduced balsamic vinegar
3 tsp of pesto
2 tsp black pepper
3 tsp salt
2 tsp onion powder
2 tsp garlic powder
½ tsp evoo
1½ cup of vegetable oil
1. Make your sauce
In a pot, add your Marinara sauce ( I use Victoria’s White Linen Collection ), your heavy cream, 1 tsp of your onion powder, 1 tsp of garlic powder, 1 tsp of salt, 1 tsp of black pepper, olive oil and then mix.
Heat it up until it’s thick and creamy.
2. Bread your chicken
Cut your chicken breasts in half (length-wise) and use a meat tenderizer (or a wooden spoon) to tenderize and flatten your chicken.
Take 3 plates out and pour your Italian style breadcrumbs in one, add flour to your second and crack your two eggs into the last one.
Season your flour, eggs and breadcrumbs with the rest of your seasoning equally (if it makes it easier, put all your spices into a small bowl and mix then use for each ingredient.) After seasoning, mix until fully incorporated and beat your eggs.
Grab your first piece of chicken and put it into the flour plate first. Make sure the flour covers every part of your chicken before dipping it into the egg mix. Once the piece of chicken is fully covered in egg, place it in the final plate of breadcrumbs and fully coat it then press breadcrumbs into the chicken.
Do this for the rest of your chicken!
3. Fry your chicken!
Pour vegetable oil into a pot and turn heat up to medium high. Once the oil is ready, carefully place your breaded chicken into the oil and fry for 2-3 mins on each side or until your chicken has an internal temperature of 165º. Do this with the rest of your chicken and place into a plate once fully cooked.
4. Put your yummy sandwich together.
Cut your baguette into 4 equal parts and toast. Start by spreading your tomato sauce on the bottom half, add your pesto on the top half, add your chicken, grate 1/4 of your parmesan on top, add your (washed) baby spinach, some black pepper, drizzle some reduced balsamic vinegar and then add the top piece of your baguette.
